Teppan-yaki

Teppan-yaki cuisine is a modern day Japanese style of cooking which involves cooking the meal on a hot-plate in front of the customer. The ingredients usually consist of meat or fish and vegetables and, as such, are very familiar to the western palate which makes teppan-yaki cuisine very popular in the west. Furthermore, the entertainment provided by watching the chef expertly prepare and cook the ingredients gives the diner a whole new dining experience.

In Matsuri restaurants we present the raw ingredients to the customer before cooking them. There are no hidden secrets to our teppan-yaki cooking as you can witness the freshness of the ingredients used with your own eyes. In the Japanese tradition, we show respect for the food we use and take pride in the culinary skills of our chefs.

Teppan-yaki cuisine became popular in America in the 1960s and only then became popular in Japan due to Americans visiting Japan expecting to eat Teppan-yaki. It is a very exclusive dining experience in Japan due to only high quality ingredients being used.

Teppan-yaki is cooked at 400ºC which means that all of the ingredients' natural flavours and nutrition are seared in. It is therefore essential to use only the best ingredients.

Its origins lie in okonomi-yaki which is a cross between tortilla and pizza and was invented after the Second World War, when food was in short supply, in order to use leftover bits of meat and vegetable. Initially cooked at home in a frying pan it led to the invention of a hot-plate for okonomi-yaki restaurants. This in turn became the teppan hot-plate now used for cooking teppan-yaki.
